- 1/3 cup butter, softened
- 1/4 cup honey
- 1/4 cup packed brown sugar
- 1/2 cup Egg Beaters
- 1 1/2 cup mashed over-ripe bananas
- 1 teaspoon vanilla extract
- 1/4 cup water (or fruit juice)
- 1 3/4 cup white whole wheat flour
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1/4 cup chopped walnuts
- 1/2 cup dark chocolate chips, preferably 60% cocoa
Preheat the oven to 325 degrees F. Lightly grease and flour a 9x5 loaf pan.
Sift flour, cinnamon, salt and baking soda in a bowl.
In a large bowl, combine butter, honey and sugar and beat for two minutes. Add the eggs and lightly beat until just combined. Mix in bananas, vanilla and water - do not over-mix. Gradually beat in the flour mixture in thirds. Stir in, by hand, the chopped nuts and chocolate chips.
Pour the batter into the pan and bake for 45-50 minutes until golden brown and pick or knife inserted in center comes out clean (be careful not to over-bake).
Remove from pan and place on a wire rack to cool.
